Looking for a delicious soup that’s clean-eating, packed full of green nutrients and will keep you fuller for longer?
One of my favourite soups is this one:
Asparagus, leek and pea soup
Here’s the recipe:
INGREDIENTS
8 asparagus spears (roughly chopped)
1 leek (finely sliced)
200g frozen peas
Olive oil
Salt and pepper to taste
METHOD
Place a tablespoon or olive oil in a saucepan.
Fry the asparagus and leeks in the oil until soft.
Add the frozen peas and then cover the mixture with water.
Season with salt and pepper.
Simmer for 10-15 minutes.
Remove from heat and blend mixture with a hand blender/food processor.
ADDED EXTRAS
1) Fry up some crispy bacon, chop into small pieces and use as a garnish
2) Add green beans, broccoli or any other vegetable you have available
